BBQ Sloppy Joes

2 T. of butter melted in a saute pan, add 1 t. minced garlic, cook till golden.

Add:

  • 1 red and 1 green pepper diced 
  • 1 large onion, diced
  • 3 splashed of terikayi soy sauce (just enough to coat) 
Cook veggies until starting to turn translucent, than add 1 lb. hamburger. Splash teriyaki soy on the hamburger as it goes in. Cook. 

Add 1/2 c. sweet baby rays original bbq sauce, 1 big squirt of ketchup, 1 squirt of texas road house steak sauce, and 2 T. brown sugar and mix together. Add salt and pepper to taste. Serve on buns with french fries and corn on the cob if desired! :)D Enjoy! 

Green Chili Potato Stone Soup


  • Saute an onion with 1/2 t. minced refrigerated garlic, add 2 cans of green chilis (macayos and ortega mild is what we used). When the onions soften, add thawed hamburger meat (1 lb). Add 1/2 t. chili powder and a little bit of soy sauce and taco seasoning (1/4 packet). Brown. Drain the fat. 
Next add 
  • 6 medium potatoes, peeled and diced. 
  • 3 carrots sliced
  • 1 c. frozen sweet corn
  • 4 c. of water
  • 2 T. cumin
  • 2 T.  of BTB chicken
  • 1/2 t. chicken bullion powder
  • 1/4 packet taco seasoning
  • 1/2 t. chili powder 
  • Salt to taste, may take more BTB chicken 
  • 1/4 t. Japelono chili powder 
Combine all of that and cook until potatoes and carrots are soft. Stir in about 1 1/4 to 1-1/2 c. heavy whipping cream. Add water and extra seasoning as needed. Serve with cheese.

Pork and Spinach Mushroom Onions Alfredo

A rough recipe but so good!

Marinate pork first in:  
  • Mushroom bullion (mixed with water)
  • chicken bullion (mixed with water) 
  • soy sauce (a little bit) 

On top of pork roast sprinkle:




  • Olive Oil
  • Parmesan Cheese 
  • Italian Seasoning
  • Salt and Pepper
  • Onion powder 
Cook in marinade you made above in Instapot for about 20 mins. 

While cooking, Cook mushrooms and onions in a pan with butter, chicken broth and a little mushroom broth. Add spinach and saute down. 

Make an  Alfredo sauce with Parmesan, mozzarella and make potatoes on the side. 
Serve over potatoes and pork. 


BBQ Beef Fajitas

BBQ Beef Fajitas

Combine:


  • 1/4 t. BBQ rub
  • 1/2 packet of taco seasoning 
  • 1 onion, diced,
  • A 2-3 lb beef roast, cut into 4 pieces 


Cook in the instapot for 50 mins.


Slice 1 green bell pepper and 1  red bell pepper and 1 large onion in butter and terikayi soy sauce, taco seasoning, and 1/8 t. BBQ rub.

When meat is done, shred. Then mix with onions and peppers and add BBQ sauce (we used Sweet Baby Rays original sauce) until it seems right.

Serve on tortillas with cheese.

Cheesy Potato Casserole

Cheesy Potato Casserole

One half of a 2 lb bag of frozen hash browns (the square kind)
1/2+ cup white onion, chopped
2+ (overflowing) cups of chopped green and red peppers (about one of each)
1 can cream of chicken soup
2+ cups shredded cheddar cheese
8 ounces sour cream
1 can of chicken or fresh chicken breast cut up into bite size pieces

Preheat the oven to 350 degrees.
Spray a 9x13 baking dish with cooking spray.
In a large bowl, mix all the ingredients together until well combined.
Pour the casserole into the dish and spread evenly in the pan.
Bake for 35 minutes, or until hot and bubbly.
Enjoy!

Note: Next time we want to use fresh chicken and more potatoes...maybe 1 c. more. Also, we want to saute the chicken, peppers and onions together before baking with creole, cumin, and black pepper.  Will probably take less time to cook  too.

Adam's Favorite: Caramel Apple Pie


I have been making this pie since we got married and Adam told me it was his favorite. I have made it a few times and each time I tweak it a little bit. This recipe is tweaked from here.

Ingredients:
My mom's pie crust (I will post that at a later date.)

Filling ingredients :

6 cups apples (golden delicious, usually about 4-6 medium)

1/2 cup packed light brown sugar + ~1/4 c. more later (to taste, sometimes the corn starch can be over powering)

1/2 cup sugar

1/4 cup all-purpose flour + a couple of T. to thicken (I will eliminate the extra T later in favor of cornstarch).

1 1/4 teaspoon cinnamon or about 3/4 t. Penezes Cinnamon (It's really strong)

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 teaspoons vanilla

6-7 tablespoons heavy cream

4 tablespoons butter

3 T. cornstarch mixed with cold milk and pour into hot sauce, quickly

Directions: Make your pie crust. Separate into two portions. Roll out the first part and make the bottom crust and put it in the pie plate. Put the other portion in the fridge while you make the filling.

Filling directions:
Peel and slice apples.Combine dry ingredients (not counting the extra flour or cornstarch) in large bowl and add apples. Toss to mix. I used my pampered chef bowl with the lid. Add vanilla. Melt butter in heavy skillet. Add apple mixture and cream. Start cooking on the stove. Preheat your oven now to 450 degrees F. Cook approximately 8 minutes, to soften the apples. A minute or two in add the cornstarch mixed with cold milk and stir until thicker. If not thick enough add a little flour. Taste. If it tastes a little starchy add about 1/4 c. more brown sugar. (Note: It does tend to make the pie a little rich when you add extra, I was surprised that it took it over the top by adding more...) Pour into pie shell.




Now take the second portion of pie crust and roll it out and top the pie. Pinch the edges to make seal the crust however you so desire. Vent the top by cutting small holes in the top. Brush the top with egg white and sprinkle with raw sugar (the big crystals.) Bake at 450 for 15 minutes. Reduce heat toReduce heat to 350 degrees F and bake 45 minutes longer.



Enjoy! Great with icecream and or whipped cream :)

Pulled pork

INGREDIENTS
  • -2 medium yellow onions, thinly sliced
  • -4 medium garlic cloves, thinly sliced or use minced garlic :)
  • -1 cup chicken broth 
  • -1-6 oz cup or portion of apple sauce
  • -1/2 tablespoon lime juice
  • -Dust with garlic and onion 
  • -tiny bit of Cajun seasoning 
  • -Sweet baby rays BBQ sauce Hawaiian flavor...big glops.. 
  • -1 packet of McCormick grill mates slow and low Memphis pit BBQ rub 
  • - 5 lbs pork loin or shoulder, bone in 
Put in crockpot on low for 6 hours or high for 4. Enjoy!
