BBQ Sloppy Joes

2 T. of butter melted in a saute pan, add 1 t. minced garlic, cook till golden.

Add:

  • 1 red and 1 green pepper diced 
  • 1 large onion, diced
  • 3 splashed of terikayi soy sauce (just enough to coat) 
Cook veggies until starting to turn translucent, than add 1 lb. hamburger. Splash teriyaki soy on the hamburger as it goes in. Cook. 

Add 1/2 c. sweet baby rays original bbq sauce, 1 big squirt of ketchup, 1 squirt of texas road house steak sauce, and 2 T. brown sugar and mix together. Add salt and pepper to taste. Serve on buns with french fries and corn on the cob if desired! :)D Enjoy! 

Green Chili Potato Stone Soup


  • Saute an onion with 1/2 t. minced refrigerated garlic, add 2 cans of green chilis (macayos and ortega mild is what we used). When the onions soften, add thawed hamburger meat (1 lb). Add 1/2 t. chili powder and a little bit of soy sauce and taco seasoning (1/4 packet). Brown. Drain the fat. 
Next add 
  • 6 medium potatoes, peeled and diced. 
  • 3 carrots sliced
  • 1 c. frozen sweet corn
  • 4 c. of water
  • 2 T. cumin
  • 2 T.  of BTB chicken
  • 1/2 t. chicken bullion powder
  • 1/4 packet taco seasoning
  • 1/2 t. chili powder 
  • Salt to taste, may take more BTB chicken 
  • 1/4 t. Japelono chili powder 
Combine all of that and cook until potatoes and carrots are soft. Stir in about 1 1/4 to 1-1/2 c. heavy whipping cream. Add water and extra seasoning as needed. Serve with cheese.

BBQ Beef Fajitas

BBQ Beef Fajitas

Combine:


  • 1/4 t. BBQ rub
  • 1/2 packet of taco seasoning 
  • 1 onion, diced,
  • A 2-3 lb beef roast, cut into 4 pieces 


Cook in the instapot for 50 mins.


Slice 1 green bell pepper and 1  red bell pepper and 1 large onion in butter and terikayi soy sauce, taco seasoning, and 1/8 t. BBQ rub.

When meat is done, shred. Then mix with onions and peppers and add BBQ sauce (we used Sweet Baby Rays original sauce) until it seems right.

Serve on tortillas with cheese.

Cheesy Potato Casserole

Cheesy Potato Casserole

One half of a 2 lb bag of frozen hash browns (the square kind)
1/2+ cup white onion, chopped
2+ (overflowing) cups of chopped green and red peppers (about one of each)
1 can cream of chicken soup
2+ cups shredded cheddar cheese
8 ounces sour cream
1 can of chicken or fresh chicken breast cut up into bite size pieces

Preheat the oven to 350 degrees.
Spray a 9x13 baking dish with cooking spray.
In a large bowl, mix all the ingredients together until well combined.
Pour the casserole into the dish and spread evenly in the pan.
Bake for 35 minutes, or until hot and bubbly.
Enjoy!

Note: Next time we want to use fresh chicken and more potatoes...maybe 1 c. more. Also, we want to saute the chicken, peppers and onions together before baking with creole, cumin, and black pepper.  Will probably take less time to cook  too.

Roasted Pepper and Sausage Alfredo



Ingredients:
1/2 lb. sausage (ground is what we uses this time but we want to try sliced sausage next time)
1 red pepper chopped into slices and then thirds
1 green pepper chopped into slices and then thirds (example below) 

1 red onion moderately chopped (see below) 
1 jar of four cheese Alfredo 
A couple shakes of paremsan Romano cheese
A little bit of milk
A spagetti squash 
Salt 
Pepper
Olive oil 

Directions: Cut the squash in half, scrape out the seeds, put flesh side up in a baking pan. Generously baste the insides with Olive oil. Then salt-and-pepper generously too. Next time we are also going to sprinkle Parmesan Romano cheese on top too. Stick them in the oven at 400 degrees for 50 minutes or until tender and fork can break the flesh easily. Don't over cook it or it will become mushy. 

Meanwhile, Cut up the peppers and onion if you haven't done so already. Then take the meat, peppers, and onion and cook them together. We didn't do it this time but next time we will add a splash of soy sauce. 
Next add Alfredo sauce, and a splash of milk to thin it out a little. Also add a couple of shakes of Parmesan Romano cheese. Sprinkle with black pepper to taste. 

Take your spagetti squash and using two forks shred it into strands and place it in a bowl. 


Ready to eat! Just serve the sauce over the spagetti. :)

Glazed Pork Chops

I made these tonight. The recipe is from here. I'm only changing with the changes I made. It was super easy and super fast to make. I served it with rice and veggies.
Note: the pepper and cayenne increase the spiciness a lot. Use caution and to taste. I used a little more the second time but we liked it. I also doubled the sauce recipe and used 3 large bone in pork chops. My husband thought it was even better the second time.
 

Ingredients
  • 4 thin or thick cut pork chops 
  • 1/2 cup brown sugar 
  • 1/16 to 1/8 tsp cayenne powder (to taste)
  • ½ tsp garlic powder 
  • ½ tsp paprika 
  • ½ tsp salt 
  • 1/16-1/8 tsp black pepper (to taste) 
Instructions
  1. Preheat your oven to 350 degrees if you have thick cut, thin cut won't need the oven. (skip step 4 in that case). In a bowl combine the brown sugar and spices (salt, pepper, cayenne, paprika and garlic powder or whatever spice blend you like).
  2. Remove the pork chops from their package and rub the brown sugar/spice mix all over both sides. Use all of the spice mix.
  3. Heat 2 Tbsp of olive oil in a skillet over medium/high heat. When the oil is nice and hot (it will look wavy in the pan), add the pork chops. Cook the chops for about 5 minutes on each side or until they are nicely browned.
  4. If you are using an oven safe skillet, place the skillet in the oven for an additional 5 minutes to make sure they are cooked through. If your skillet is not oven safe (most plastic handled skillets and teflon are not safe in the oven), transfer the chops to a baking sheet lined with foil then place in the oven.
  5. Remove the chops from the oven and drag each side around in the thick glaze that has formed around the chops in the pan prior to serving.

Mom's New Year's Cinnamon Rolls

Mom's New Year's Cinnamon Rolls  

My mom made these every New Years Day for breakfast with hot chocolate growing up! Now, I like to make them for General Conference, New Years, and let's face it, anytime the time calls for it ;)! 

They are faster to make then most rolls. Prep time is about an hour. Serves: 12-14 BIG rolls :) 

Ingredients: 
1-3/4 c. warm water
3 T. yeast
6 T. white sugar
1/2 c. oil
2 eggs
6 + cups of flour
butter
cinnamon + sugar (1/4 c. cup of sugar + 2 t cinnamon)
brown sugar
raisins (optional)

Instructions: First, preheat the oven at 350. Then mix the first four ingredients togethr and let them stand for 15 mins. (I usually place the bowl on the warming oven.) After the fifteen minutes are up, add the rest of the ingredients into the mix. Mix well. Should still be fairly sticky but not so much you can't roll it out. Roll out the dough to about 1/2 inch thick and about 18x10 in diameter. Next, spread the dough generously with real butter. Next sprinkle on the cinnamon and sugar, brown sugar, and raisins if using. Roll up and cut into 1-1/2 inch wide rolls. (They cut the easiest with floss.) Let them rise on a greased tray for 18-20 mins. Bake them at 350 for 18-20 minutes. Ice them while they are still very warm.

Note: Gooeyness depends on how much sugar, cinnamon, and butter you add. I didn't add enough today and they came out drier. This is very thick dough so you want more than you think.

Icing Recipe: 
3 c. powdered sugar
1/4 c. butter
5 t. milk
1-1/2 t. vanilla

Mix above together. Spread on top of hot rolls. Mmmm... You can also play around and add cream cheese to the mix too if you'd like...

Secret Meatballs


Also called Swedish Meatbals, which maybe will become a lot more correct since I am about to share the "secret" with all of you. This is one of my favorite potluck dishes for when I am out of time, or money, or both. Basically this recipe should only cost between $10 and $15 dollars if you really add alot to it. We did a 4 person serving size but you can pretty easily alter the quantities. Ok here comes the ingredients! Drum-roll please....



Ingredients:

  • Meatballs 1 lbs
  • Grape Jelly 1/2 jar
  • Pinapple-Apricot jelly 1/2 jar
  • Hienz Chili Sauce 1/3 jar
  • Rice


Yeah you read that right JELLY. I know, I know it sounds weird but trust me it's delicious and we have been using it as a secret ingredient for years in the Albright family.  Now the first thing you are going to smell as you cook this is the chili sauce because it takes a little bit for the jelly to cook down, so don't worry if it smells really acid~y it won't be. As far as the meatballs go since this is a fast "throw together" recipe I like to buy pre-made ones.


We got this 2 lbs bag of turkey meatballs for 5.50 from our local store with a coupon, which was less than what the same weight of ground turkey cost. Plus they are way, way easier. Lastly we made some delicious brown rice to serve the meatballs and sauce on. Then just heat up some frozen or canned veggies and voila dinner. It was a huge hit, and this is one of those recipes that actually taste just as good, or even better as "leftovers." So now you know our secret, enjoy! :)

Quick and Easy Homemade Pizza

We love pizza in this house. Who doesn't love quick, simple, and delicious? But, pizza is often expensive to purchase (never mind, kind of unhealthy) and we don't do it very often. So, we came up with our own idea that keeps our pizza cravings at bay. Ready? It's healthier, fast, cheap, and the possibilities are endless.

Here's what you need:

  • Pita bread (We buy a package of six, seven inch pitas for $1.50 at our local store. Our favorite is Papa Pita's Greek Pita Flat Bread 100% Whole Wheat) 
  • Pizza sauce (You can make your own or go for the easy/quick way which in this case we do...our favorite pizza sauce is Classico Traditional Pizza Sauce. It's perfect and tastes homemade. Again, it's still cheap...about $2 I think at our local store.) 
  • Cheese (We use mozzarella and sometimes sharp cheddar. Often times shredding it ourselves saves money. We've also been adding a little fresh mozzarella too.) 
  • Your favorite toppings: bell peppers, onions, olives, pineapple, ham, hamburger, mushrooms, you name it...:) It's up to you! :) 

Here's the simple how to: 
  • Preheat the oven to 375 F. 
  • Place the pita bread on a cookie sheet. (We use stoneware, as that gives it a crispier crust.) 
  • Smoother the bread in sauce to your liking. We find that an ice cream scoop makes it easy to spread and dispense the amount we need. 
  • Add cheese.
  • Top with your favorite toppings. 
  • Place in the oven for 20 minutes. 
  • ENJOY! 
Here's some of our favorite toppings: 
Hawaiian Pizza: Canadian Bacon or Ham cut up into small pieces and pineapple.

Supreme: Sliced olives, beef crumbles, red and green bed pepper, sharp cheddar and onion. Mushrooms are good too if you have any on hand. :)
